Simple Chicken Curry (any Chilli Jam)

Ingredients:

Chilli Jam of your choice

4 chicken breasts

Large onion

2 tins of chopped tomatoes

Pinch of Garam Masala

Single cream / Creme fraiche / Coconut cream (optional)

Splash of oil (we use rapeseed oil)

This is one of our favourite recipes – a very simple and tasty chicken curry.

Chop up 4 medium chicken breasts and stir in 1/2 a jar of Original for a medium or 1/4 – 1/2 a jar of Bhut Jolokia chilli jam for a hot to very hot curry and leave to marinade for 1/2 an hour. Roughly chop a large onion and lightly fry off in some rapeseed oil, stir in a large pinch of garam masala then add the chicken and fry stirring until the chicken is sealed.  Add 2 tins of chopped tomatoes, bring to the boil and then simmer gently for 1/2 an hour stirring every few minutes to reduce and thicken. 15 min through the simmer I like to add some cream or creme fraiche or occasionally some coconut cream.

Delicious served with rice or naans – or both!

It’s not a hard and fast recipe, play with it a little, add extras or change chicken for seafood or lamb, go on…. live dangerously!
