Seafood Stir Fry with Noodles

Method
- Bring a large pan of water to the boil, add the noodles, and cook according to the pack instructions. Drain, rinse in cold water, and set aside.
- Heat the oil in a wok or large frying pan over high heat. Add the onion, peppers, garlic, and ginger. Stir fry for 2–3 minutes until slightly softened but still crisp.
- Add the prawns and squid to the pan and stir fry for 2–3 minutes, until the prawns turn pink and the squid is opaque. Add the mussels or scallops, if using, to warm through.
- Lower the heat slightly, then stir in Simmering Smoky Chilli Jam, soy sauce, vinegar (or lime juice), and honey if using. Mix well until the seafood is evenly coated and glossy.
- Toss in the cooked noodles and stir through until fully coated in the sauce. Add a splash of water if needed to loosen.
- Divide between warm bowls, top with chopped coriander or spring onions, and serve with lime wedges.

For the stir fry
- 250 g medium egg noodles
- 2 tbsp vegetable or sesame oil
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 small red onion, thinly sliced
- 2 cloves garlic, finely chopped
- 1 small piece (2 cm) fresh ginger, grated
- 250 g raw king prawns
- 150 g squid rings
- 100 g cooked mussels or scallops (optional)
- 2 tbsp Simmering Smoky Chilli Jam
- 2 tbsp light soy sauce
- 1 tbsp rice vinegar or lime juice
- 1 tbsp honey – optional (we recommend our Hot Honey)
- Handful fresh coriander or spring onions, chopped
To serve
- Lime wedges
