Breakfast Hash with Sweet Ginger
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴

200g baby potatoes, halved
1 small red onion, diced
1 red pepper, diced
100g baby tomatoes, halved
25g @thechillijamman Sweet Ginger Chilli Jam
4 x sausages, cut into chunks
20g cheese, grated
Half a tin of baked beans
Half an avocado, cubed
2 x eggs

𝘔𝘦𝘵𝘩𝘰𝘥

1. Add your potatoes to a pan of water and cook until softened.
2. Drain the potatoes and season with salt and pepper then place in your air fryer.
3. Once the potatoes have started to crisp add in the sausages and cook for 5 minutes.
4. Add in onion, pepper, tomatoes and chilli jam, give it a good stir.
5. Once the veg has softened add in the baked beans and cook for a further 2 minutes.
6. Add in the avocado, stir well and top with the cheese. Cook for a further minute.
7. Whilst the cheese is melting cook your eggs.
I find the best way to fry an egg without oil is to use a decent non-stick frying pan, get it hot, crack in your egg, let it solidify slightly, turn down the heat a little, add a splash of water to the pan and then pop on a lid.
8. Serve and enjoy

I sprinkled over fresh chilli, fresh coriander, egg seasoning and chilli flakes.
