Peanut Chicken (Sweet Ginger)

Peanut Chicken with Sweet Ginger Chilli Jam

2 chicken breasts cut into strips
1 red onion, sliced
80g green beans, halved
60g baby corn, chopped
400ml light coconut milk
1tsp ginger puree
1tsp lazy garlic
15g soy sauce
40g @thechillijamman Sweet Ginger Chilli Jam
80g peanut butter

I had mine with rice, crushed Brazil nut, fresh coriander, sriracha sauce, fresh chilli and chilli flakes.

1. Cook the chicken until golden then add in the green beans, onion and babycorn and cook for a further 5 minutes.
2. Add the rest of the ingredients and simmer until thickened.
