‘Sea-food And Heat It’ Recipe

 

Ingredients:

Chilli Jam of your choice

A good handful of cooked prawns, mussels and the same again of squid rings

A large onion

Stir fry vegetables – baby sweet corn, green beans, sugar snap peas

A couple of tomatoes

A nest of fettuccini noodles

A splash of oil

 

This is so quick and easy and a regular on our table!

Marinade the seafood with the Chilli Jam for about an hour or so (my favourite is using Bhut Jolokia) and a splash of oil to help carry the flavours.  Roughly chop the onion and the stir fry veg.  Break up the noodles so that you end up with smaller pieces around 2 – 3 inch and cook in boiling water.  Heat a wok with a tablespoon of oil, add the onions and fry, then add the prawn and squid and stir fry for a minute or so follwed by the rest of the vegetables.  Stir for a couple of minutes. Finely chop the tomatoes and add to the wok, this will help to sauce it up a bit.  Stir until the prawns and squid are cooked.

Drain the noodles when soft, add to the stir fry and serve!
